What happens if I don't like XBMC v.11 (Eden), can I just install XBMC 10.1 (Dharma) again?

Yep. Whilst Eden does "upgrade" the library, it does store a dharma compatible copy. Just replace the Eden application with Dharma.

What's with the new volume and volume amplification in the audio settings when playing a video?

Please see wiki article: Videos#OSD Audio and Subtitle Settings

What might break with the transition from Dharma to Eden?

(Question to Anyone - does Eden first startup default to default skin etc incase skin hasn't been updated for Eden?)

XBMC has upgraded it's use of Python, there is a backwards compatibility clause but nothing is ever certain.
Skins - needs to me updated for Eden - check your skin has been upgraded ready for Eden? http://forum.xbmc.org/showthread.php?t=94724
The whole implementation of the JSON-RPC server has been refactored to be compliant with the JSON-RPC 2.0 specification. This may cause problems with apps that require on XBMC's webserver?

How do I upgrade to Eden (all the steps)?

Mac - copy new application, overwrite old app with it, start app. Should work
Windows - Install from executable and start up?
Linux - Not sure (sorry!)
Openelec - Wait for openelec to push update
iOS device - as per (http://wiki.xbmc.org/index.php?title=XBMC_for_iOS_specific_FAQ#Installing_XBMC_for_iOS)

In videos where is the "Make default" option? It was in Dharma

It was been removed to reduce menu cluter?
Suggest users add video to favourites and access through there (most skins can display a favourite as a separate menu item or submenu option)

Can't add file source (like is possible in music and video) for Pictures on Eden Beta 2

I believe the logic is that pictures doesn't actually have any sections for fast linking, so no need for any submenu.

What happened to "manually add to library"

It's gone. I was believed that it wasn't useful due to the amount of information it would add to the file (none). If you want the file in the library then use nfo files, they allow more information to be added and there are many programs available to make them on a variety of platforms.
